A slow cooker is a must in our book! It allows you to come home after a busy day to a nourishing meal with little effort and a lot of taste!
This delicious slow cooker fish curry recipe is ideal to warm you up this chilly winter. Developed by yoga teacher and ayurvedic practitioner Keren Cooksey.
Keren has been studying yoga for over 25 years and teaching since 2004. She lived in Australia for over a decade and there opened and ran Brisbane Yoga Space, on moving to Falmouth in 2014 she then opened www.falmouthyogaspace.co.uk.
Keren loves to study and in 2018 completed her ayurvedic practitioner course and launched www.ayurvedafalmouth.co.uk
When not teaching, she can be mostly found in the ocean either cold water swimming or bodyboarding, and credits these with keeping herself sane during lockdown! Keren is also a single mum to 7-year-old Frank and she says he is her inspiration for wanting to be healthy and strong, body and mind!
Ingredients
1 clove of garlic
half yellow onion
1 tsp mild curry powder
1 tsp turmeric
1tsp cumin powder
1tsp coriander seeds
1tbp finely chopped fresh ginger
I put all of this on to sauté in the crockpot while I prepped the following:
2 loins cod
Broccoli chopped into small florets
Mangetout
Open a can of coconut milk
Throw all of of this into the pot and pop on to cook on medium for 2.5 hours
